When Valentino fired opened, Italian food in America meant pasta and heavy sauces. Piero Selvaggio set out to make food cleaner, to make flavors more distinct, and to ensure that his sauces didn't drown his food. He and his chefs began to reinterpret the classics or, "reinterpret memories." This is a process that continues to this day. Selvaggio brings the freshest ingredients from farm to table, including many vegetarian and gluten free items and creates fantastic dishes that are always inventive and always stunning.
